| 4 boneless, skinless (approx. 180g-200g each) | Chicken breasts |
| 60ml (1/4 cup) | Olive oil |
| 4 cloves, minced | Garlic |
| 30ml (2 tbsp) | Lemon juice |
| 1 tsp | Dried oregano |
| 1 tsp | Dried thyme |
| 1 tsp | Salt |
| 1/2 tsp | Black pepper |
| 2 tbsp, chopped (for garnish, optional) | Fresh parsley |
| 4 thin slices (for garnish, optional) | Lemon slices |
Preheat your oven to 200°C (400°F). Lightly grease a baking dish or line it with parchment paper.
In a small bowl, whisk together the olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and black pepper. This creates your flavorful marinade.
Pat the chicken breasts dry with paper towels. This helps the marinade adhere better and promotes a nice sear if you choose to sear them first (optional step). Place the chicken breasts in the prepared baking dish.
Pour the lemon garlic marinade evenly over the chicken breasts, ensuring each piece is well-coated. You can gently rub it in with your hands or a spoon.
If using, place a thin slice of lemon on top of each chicken breast. This will add extra moisture and a beautiful presentation.
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 74°C (165°F) when measured with a meat thermometer. The exact time will depend on the thickness of your chicken breasts.
Once cooked, remove the chicken from the oven. Let it rest for 5 minutes before serving. This allows the juices to redistribute, resulting in more tender and moist chicken.
Garnish with fresh chopped parsley and serve hot. This dish pairs wonderfully with roasted vegetables, rice, or a fresh salad.
